Recipe: Collagen caramel slice

This slice is one I have made countless times for my friends when visiting them the first time after having their babes. It’s a favourite!

Ingredients:

Base ingredients

  • 2 cups almond meal

  • 1 tsp vanilla essence 

  • 4 tbsp collagen powder (Nutraviva is my fav)

  • 3 tbsp ghee or butter

  • 1 egg

  • Pinch of salt

  • 3 tbsp maple syrup

Caramel ingredients 

  • 3/4 cup nut butter (I have used cashew and peanut)

  • 2 tsp vanilla essence

  • Pinch salt

  • 1/2 cup softened ghee or butter

  • 3-4 tbsp maple syrup

Chocolate ingredients

  • 1 block of dark chocolate melted

  • Make your own chocolate with 1/2 cup cacao butter or coconut oil, 1/2 cup cacao powder and 5 tbsp maple syrup

Method:

  1. Preheat your oven to 180 degrees

  2. Blend all of the base ingredients together. Then press into a tin.

  3. Bake for 20 minutes or until golden. Place into the fridge to cool down.

  4. Blend all of the caramel ingredients until creamy and lightened in colour.

  5. When the base has cooled down, put the caramel on top and freeze until it’s set.

  6. Finally, make your chocolate by combining everything together and whisking or melt your chocolate.

  7. Pour on top as the final layer and place back into the fridge until set.

  8. Slice and enjoy!
